can someone give me a recipe for shrimp fettichini (probably not spelled correct) , the one's i find on the web don't sound to tasty. anyone??
I can tell ya how i make it but i dont use a recipe.
Dice 2 medium onions ,3 ribs celery and 1 lg bellpepper.
Sautee vegetables till wilted in just a little olive oil .
Add 3 lbs medium shrimp or cut up large shrimp.
After shrimp or done ,reduce heat and add 1 stick butter.
When butter is melted, start adding heavy whipping cream and stirring.
I usually end up adding a quart of cream . Bring to a simmer and let it thicken.
This is the time i taste and season . Then add some grated romano cheese and stir well. (if it gets to thick you can thin w/ milk) (If it is to thin you can thicken w/ a corn starch slurry) Or add more cheese.
Serve over angel hair pasta w/ hot garlic bread .

Try the attached recipe. I have always cooked it for the family and they rave about it. Kinda rich for me. This is a Prejean's recipe with modifications.
