Always use buttermilk instead of eggs and milk.

For shrimp, use seasoned flour. Do not fry too long. First batch 2 minutes, taste and decide if it needs more or less. Then test the next batch and the next batch, then fry some for the rest of the family after you are full.

For fish, use Tony's seasoned fish fry or Zatarains seasoned fish fry.
I season the fillets and leave in the fridge a few hours before frying.
Don't fry too long. I usually fry no longer than 3 minutes and the fish are floating.
Test a few batches. This will ensure your family gets the best tasting fish.

Drink plenty of beer.

That's how I fry, semi-dronk.

I soak all my fish in ranch dressing with tabasco for several hours, then just take em straight from their to the batter and fry em. Unbelievable!

You can also use Texas Ranch which is basically a spicy ranch.

I usually marinade my fillets in louisiana hot sauce, mustard, and a little tonys. Then batter them babies in some Zatarains crispy southern fish fry. I like to wrap my scrimps in bacon and fry them bad boys. I think the key to frying shrimp is you have to keep em ice cold until you batter then throw em in the greese.

i like trout pan fried with a little bit of olive oil, marinate in hot sauce little milk and mustard, then use tonys and bread crumbs if you want. get pan hot and sear them on both sides.

the key is to use fresh trout only and a good teflon skillet

serve with a salad and some sweet potatoes or french fries, little pie and ice cream for desert....

Quick easy pan fried trout:
Season fish, roll in cracker crumbs, fry in hot butter.

You have to eat it quick. It won't taste as good when cold.

trout:
season flour with salt and pepper
cover fish on both sides with flour - no batter
melt some butter in a iron skillet
cook fish until brown and crispy on both sides usually 2 min each side
take fish out
squeeze lemon into butter in pan
pour butter over trout
serve right away
If you are making this for a group put the trout in the oven on plate on lowest setting usually 170 to stay warm. Do not pour butter over trout till you are ready to serve. After each batch add more butter to pan.

I have gotten a girl who swears she doesnt like fish to eat this and say it was good

Shrimp:
season flour with tony's
mix milk, egg, and spicy mustard for batter
dip in flour, batter, then flour again
fry till golden about 3 minutes
