Tried this last night for the LSU ball game and it is got to be one of the easiest and quickest meals I've ever cooked.

Half Black Trout
4-6 trout filets (feeds 2 adults)
one whole yellow onion sliced in rings
Virgin olive oil
Tony's
Zatarrains Blackened Seasoning

Start w/ 2 tbs of oil in skillet and cook down sliced onions until golden brown and very tender. While that is cooking down, season fish only on one side of the filet. Start with a liberal covering of Tony's, then top that w/ very light sprinkle of blackened season.

Once onions are cooked, remove and place on paper plate, drop filets in skillet w/ season side up with 2 more tbs of oil. Pan fry for a few minutes until fish is partially cooked. Then turn heat to high, flip filets and cook seasoned side. Filets are done within a minute or two from flipping. Remove from pan and cover on plate w/ onions. Only half the filet gets the dark/crusty side which does not over power the taste and the cooked onions blend all the flavors together.

Their you have it! - 1/2 Black Trout! Frickin awesome

Man that sounds great! I love pan fried flounder and trout...never thought about the onions...

Just made this for dinner...WOW, that was some good stuff!

fresh trout + sweet onions = clean plate.
