I thought Barbacoa was goat head,wrapped in cheesecloth and slow smoked. Pull the meat away from the skull and eat like pulled pork.

Barbacoa is a open fire cooking method .That is where the name barbque comes from.

La morenita on ambassador caffery has lengua Barbacoa and about a dozen other tacos. Pretty tasty. And fresh chorizo too.
