I'd def be down to judge this event! I can't compete since I use jar roux!

mr crab 01-28-2015 07:52 AM

The judges shouldn't know who cooked the gumbo. Just give them a bowl with a number on the bottom. The vote for the bowl number they like best. Simple...just like bbq cook offs do it

fishfighter 01-28-2015 07:55 AM

Maybe we can get it rolling by making it a charity event, entry fees go to a specific charity

Ragin_Cajun 01-28-2015 11:51 AM

Hey guys, That was me with the brewery next door. Let me chat with the owner and see what his involvement may be.

I also have 2 boys ramping up soccer, so I need to look at their schedule for open dates.

I too am running a company, directly affiliated to the oilfield.....things getting a bit hairy.

In H-town right now, try to get back with dates soon.

We don't have to have it at my place if dates don't match, but this does need to happen!

Well you can't get a Texan to judge a Cajun dish. Guess they'll have to be from somewhere in LA south of I-10

All them boys steady posting in "the roux" message board...where y'all at? I wonder if signate's food tastes as good as it looks?

saute86 01-28-2015 06:52 PM

Depending on where and when I can judge it for yall. I have 26 years experience as a chef. I have a culinary degree from New England Culinary Institute. I have worked for Hyatt Regency in New Orleans, Harrah's in Lake Charles, and Lauberge. I have won the Wild Game Gumbo professional division at Mardi Gras Gumbo cook off in Lake Charles. I also won the BBQ cook off at Contraband days in ribs 2 years in a row and wild game and seafood divisions one year on the Harrah's team. I am from the Welsh Lake Arthur area so I am a local boy. I have cooked more gumbos in 90 gallon pots in a year than most of yall will ever cook in a life time....lol. If yall want a non bias judge that knows gumbo let me know.

mr crab 01-28-2015 07:32 PM
