I just finished skinning and quarting supper so I'm not sure yet. Im thinking pork backstrap smothered down with peppers and onion.

Chicken and sausage gumbo tonight. Was waiting for a cold front but gave up and turned down the A/C.
Kroger had corn 6 ears for a $1. and I stocked up. Took some down and removed the silk and tied the shuck back up. Soaking tonight and will put on the smoker tomorrow. Any tips on smoking corn?

Im down with that man. Going gumbo myself for the Saints opener. Looks great.
Never smoked corn but low and slow usually always works. Good luck man. :)

It does feel like gumbo weather, but rules are rules. You can't just go strike up a gumbo before the first frost.
