I need a recipe
 
ok every year for july 4th, my family heads to Toledo Bend with her brother and sisters. We are the only ones with a boat, so i stay busy all week trying to give everyone that tube ride or the jetski ride.
this year, with the economy the way it is, I need some cheap ideas of what to cook at toledo and something that will go far. we normally supply most of the food.
Anyone have any good ideas or recipes that they would like to share with me? anyone have a good recipe for catfish balls etc . come on any ideas are great here!!!

Details:
We are going to be 15 of us to feed for one week.
we will be in a cabin with a stove and an oven to utilize?
What is something different to cook on the pitt?
come on I know you can come through for me. My wife's family recently lost someone very special to them and i just want to make their week a better one.

i love me a big pot of tomato gravy and sausage, and normally have plenty of deer sausage so its cheap for me other than the price of deer hunting, what kind of freezer inventory do you have? any fish to fry or grill ?

Get some beef or pork rib and boil em in crawfish boil for about 15 minutes or until the meat starts to rise up on the bone. Throw em on the pit after that for about 30 minutes or so. These friggin things are great!!!!

You can actually do the boil part now and freeze em. I keep some in the freezer all the time!

Cheap, easy and great to eat!

Man a good pot of Red Beans and rice goes long way.........

And right now...........Chilled cucumbers and tomatoes can be found cheap and same thing...........goes a long way.

Chicked wings and thighs on he grill, Easy and fast.

And we have been picking up those pre seasoned pork loins.......

Cook them on the grill in a black iron pot with potatoes and carrots...........can of cream of mushroom soup............

Good stuff

I know not recipes but ideas

You can get a 10 lb. bag of leg quarters for around $5.
Get a couple bags of those and some taters and eggs and bbq some chicken and make some tater salad.
Can't get much better than that and it ain't spensive.

ok, i am surprised, this is datcajunman's wife. I asked him to research some good and cheap ideas for Toledo, and wow, he is trying,,, awe,, he's so sweet, thanks for the ideas, but keep them coming,, hey southern, I may try those ribs tonight to see how they taste,,surprise him after work today lol and simple, I had forgotten all about the red beans and rice,,, thanks,,,and shawn,,, We can't keep fish, we eat it as we catch it,, but our last few years we had no luck in catching anything in toledo, I guess we go when it is too hotttt and we play in the boat more than we fish..... Keep the ideas coming thanks

hey golden, what do you use on your trout lines,, he may know but i want to be prepared and bring everything that we will need, and we never think about bait for the trout line until we are there. we have used that soap concoction a few times and i don't remember what else

Good old drunken chicken!!!!!!! One chicken can serve 4-6, especially w/ kids involved. Best thing about it, inject it, rub the outside, set it on a can and forget about it!!!

A Boston Butt boiled for three hours, or until the bone is ejected. I use one half cup of crawfish boil for the first 1.5 hours per Butt.

Then add a second 1.5 cups of boil for the second 1.5 hours. Keep the meat covered with water and on a little bubble/roll.

Hard hard is it to boil water?

For 25 people, I would do two.

Simple and good!!!

dat cajun man....ya eva heard of a poor cajun mans meal...its rice meat and water...and thats wat a jambalya is a box of sausage a cheap pork but and some rice and green unyuun and you got you a good one...scrape dat brown of ya pot and itll taste real good ya....remember jambalya is a poor mans meal always was and still can be....and it goes reall far...

4-5 Chicken Breasts boiled and diced or pulled
1 Can of Cream of Chicken
1 8oz Sour cream
1 package of mushrooms – optional
1 sleeve of Ritz Crackers
Butter
Lemon Pepper
Flour

Mix the cooked chicken, cream of chicken, sour cream, and mushroom cooked in 1 stick of butter, and add lemon pepper taste. Place in Pyrex.

I use flour when I use too much butter ( on purpose cooking the mushrooms) to soak up the liquid to make it thicker.

Crush the sleeve of Ritz Crackers. I use a gallon zip lock and a rolling pin or can of soup to turn into a fine powder. Melt 1 stick of butter and mix the crushed Ritz crackers into the butter for a topping. Spread it on top of the product in the Pyrex.

Bake for 30 minutes at 350 degrees.

This is my favorite to do. I triple it for a group of 25.

pork steaks! some places they sell them already marinated. cost u $10 to feed 5 or 6 ppl. my dad always makes fun of me cause when we at the camp all we do is bbq pork steaks. but hey, they good and cheap.

Jambalya fo sho. If you want to catch some good catfish for some frying, bring ya some 20 oz coke bottles (about 40-60)and some string and hooks. I like 6/0 up to 8/0 myself. Catch you some little bream on some small perch hooks and just before dark go out and bait em and chunk em out in da water. Great for the adults and kids. It gets real excitin when you see one of dem bottles go under and run about 20 feet or so before it comes back to the top. then the chase is on to get it. If you all are stayin for a week, you will have a blast doing this and get fish to fry. Don't know where you are staying, but you can go to the mouth of about any cove and do it...throw out jugs. Have fun and catch some fish. Once you start catching the cats, keep the bellies for cut bait, It works great out there.

Season up some bass or white perch fillets, fold some foil up in a pan shape, throw the fillets in with a little water and cover with another sheet of foil and chunk it on the pit.

Why not pastalaya?
So much easier than jambalaya.





Ingredients:

2# Pasta (your choice)
2# Cubed pork,(Small cubes)
2# Smoked sausage
3 Med . Onions
4 ribs celery
1 Bell Pepper
1/2 Cup shallot greens
1/4 Cup chopped parsley
3 Tablespoons Worcestershire Sauce
1 can Golden Mushroom Soup
1 can French onion soup
2 cans Chicken Broth
1/2 Gal Water.
Kitchen Bouquet
Salt
Pepper (red and black) Directions:

Brown cubed pork until tender, add sausage and cook for about 20 minutes.
Add chopped onions, celery and bell pepper. Cook until all vegetables are wilted.
Add chicken broth, water, soups and season well.
Add a little kitchen bouquet for color. (you decide.)
Bring to a boil and add chopped shallots and parsley. Boil for about 10 to 15 minutes. Lower heat .
Add pasta and cook for 20-25 minutes, until pasta
is very tender. If you have to much liquid you can remove some. if not enough ,you can add some.
This is a starter recipe!
You can also add cubed chicken or beef and a lil andoullie.
Better to use elbow macaroni or shells over spaghetti as the spaghetti dries out pretty quick.

You could also do almost Jambalaya Po Boys, instead of using rice or noodles just slap some dat jambalaya on a french bread and eat it up.

My go to when I have a lot of family over is either boiled seafood or a Boston butt pork roast with white beans.

check out nomenu.com he has some good recipes, the pepper crusted pork loin is the bomb with that sweet heat sauce.

Also, you can get a couple of big ole ripe mississippi watermelons and ice them down and eat em up

If ya going to do water melons make sure an do one for the adults!
Plug it stick a fifth of stoleys in the plug hole and ice it down .

Great burger
Here is a great burger for ya'll to try !!!
mix grd beef and seasoning to make your favorite burger,
portion meat to make lg patties, seperate portions into halves.
Now comes the good stuff. Slice some andoullie thin , get some slices of your favorite cheese. take the 1st portion of your pattie ,flatten , cover this w thin slices of andoullie and 2 slices of the cheese ( i use either pepper jack or sharp chedder) take the other portion of your pattie flatten and place on top. seal the edges of pattie by pinching the ground beef together and grill to 160 deg internal temp. for med/ well
Sautee mushrooms and onions and fry you some bacon crispy top burger w/ these and enjoy.

take you chicken tender's, cut them into little bite size peices, stick on a toothpick, stick a jalopenio on, wrap in a small peice of bacon and grill.
**marinate the chicken in Carribean Jerk Chicken Marinade.

this reminded me of how my mom growing up would make lasagna, enchiladas and other dishes on sundays for the week, she would bake then freeze and defrost during the week and reheat still just as good, like you said gerald keep it easy and spend more time fishing and having fun

If you are planning to serve some Jambalaya........make the "stock" [everythng but the rice and only a minimum amount of water] at home. Freeze this in small containers.

Then all you have to do is take out what you need.......add some water and heat to unthaw before adding the rice to cook.

When making a big batch of Jambalaya.....I will boil the chicken [only using a little water] in a seperate pot and then remove the bones. This way you do not have the extra "mess" of the bones when eating.

HEB has already marinated fajitas and they're good . . .East Texas has all kinds of garden markets on the side of the road right now . . .Home grown tomatoes, peas, beans, okra, peppers, onions, etc. Fresh and good! I went to Tyler last Tuesday and picked up 6 bu. of Noonday onions . . . I love this part of the year . . not to mention blueberries, plums, peaches, etc. . . . Enjoy!
