USDA choice vs prime
 
most beef in grocery stores is choice correct?

anybody know where to get the good stuff?

meat markets... the eunice superette processes alot of meat you might call them... in lafayette Joey's or Took's

Most grocery stores have "Select" or "Choice" quality meat. Some higher end grocery stores and meat markets sell "Prime", but it typically ain't cheap.

Assuming you are talking about the Sam's that is affiliated with WalMart, it is FAR from "Prime" meat. ;)

i looked at the fresh markets website, they are calling theirs premium choice. not sure what that means

Just thought about Rouses they have a really good meat section...also any high end grocery store will not put all their meat out. Talk to the butcher.

For most of my grocery career I have been in Center Store Grocery, recently I have had to take on a role in Fresh Meat and packaged meat. I learned recently that only 2% of beef produced is considered prime. So Shad is right, prime meat will be expensive. I will say that if you are looking to purchase lamb, Sams is the place to buy it.

If you really want some good advice ask Billy Stix, besides being a world class rod maker, he was or is, not sure, a butcher for Publix supermarket. Publix is a great grocery chain and has a great meat department.

If you get a good cut of Choice quality meat, it's still a good steak when prepared right. Personally, I buy Choice (e.g. Rancher's Reserve) steaks usually, unless it's an important dinner. Then I'll go out somewhere that has good dry-aged beef like Capital Grille. ;)

Prime is usually sold to higher end resturants, who pay a prime price for it.
Choice is still a good cut of meat, it just doesn't have as much marbling that prime does.
You can find choice that is tender, but you can also find prime that is tough.
Most of the time, you can look at meat and tell if it is a good cut or not, especially a ribeye.
I get my steaks from Market Basket, at the meat market section. If you buy from the prewrapped
cooler, they don't look as good.

There is a place just off Johnson st. behind the Don's Seafood Hut, that has [or had....many years ago] good quality meats. I don't remember the name. I bought some eat there for a company BBQ and it was great.

bought a prime beef tenderloin from sams club in laf. a few weeks back, Paid little over 9.00 lb. and it was "sin sational."

Sams Club has much better meat than Wal-mart. Sams sells Choice grade for a better price than most stores sell their Select grade. Their rump roasts and round steaks are always really good and sell for $2.68 a pound. Their ground chuck is the same price. Usually the better meat stores like Winn-Dixie and Albertsons sell Choice meat as well but their prices are usually 50% higher than Sams. Believe Choice is good enough for all but the most discerning palates. Next time you go to Ruth's Chris, check out the grades on their different steaks. There are several cuts that are not prime including the filet mignon, which I have always gotten. Even though it is not prime, I've always immensely enjoyed it! Have to be careful as well to not confuse Prime Rib which is a cut of meat that can be any grade with the Prime beef grade. The Superstore on Johnston street used to have Prime grade which I remember selling for about 2-3 times their regular meat.

A good cook grill chef can make prime choice and select grades of meat good. Some high end steak house use there own people to grade there meat and cook all different grades.

My wife's boss was formerly a dept head at the AgCenter at LSU, he's a food scientists. He says Sam's is one of the best places to buy meat. He said most meats found in WalMart and chain grocery stores are injected with a water/salt solution to make it weigh more.

But specialty meat shops are the ticket in my book.

They are required by law to state on the package if they inject it with that. Also all that corn fed beef is crap any way buy grass fed/finished beef from a local farmer and you will be amazed at what you have been missing

Look at the label . if it says inhanced or may contain up to x% water or other products . LEAVE IT IN THE MEAT CASE!! and go somewhere else.
most chain stores sell select beef . choice is worth looking for . Prime is VERY good . But you PAY for what ya get.
