Cleaning and cooking tips for flounder

What's the best way fillet and cook flounder.

DUCKGOGETTER 10-18-2011 10:52 AM

Imo flounder is beast whole stuffed with shrimp/crabmeat stuffing and baked. It definately makes a turd.

Scale it, cut straight down the backbone(middle of fish) and butterfly it out. Put stuffing in and fold the meat back over to the middle and bake or grill.......I'm drooling

cut the center. butterfly them out following the bones outward. this is great if you have alot of flounder and want filets

I like stuffed flounder alot but fried is good too. Warm up a can of blue runner white beans eat dat over rice with broke up fried flounder on top. Trust me its off da hook

specktator 10-18-2011 02:48 PM

Had a buddy show me this one time. Cut it down the middle and butterfly it. Open up. Get a little pair of cutting pliers. Clip the ribs all the way across the top and bottom edges of flounder. Then filet underneath ribs and they all come out. Then it's completely boneless! There is a good bit of meat under that rib cage. Den stuff dat!

I have done it this way before, takes a lil while but like you said zero bones. After you run your knife alone the backbone on each side, then turn it inside out and cut away all the bones with pliers or scissors. If you don't cut the skin after you take the bones out it will hold water. Stuff dat like a football

Stuffed with shrimp and crab meat and deep fried!!!

1 cut off head take out guts
2 make a cut fdown lateral line from head to tail on brown side of fish
3 take a SHARP knife and work the blade against the rib cage seperating flesh from bone on both sides of your lateral cut
4 slowly work your blade on the underside of the rib cage seperating meet from bone all the way to the tail cutting baon from fin with pultry shears as u go twards the tail
5 take pultry shears and cut bone at tail....pull out rib cage fully in tact.
6 rinse, stuff, broil, eat

I can show you an easy way to fillet a flounder, but it is too hard to tell on here.

bjhooper82 10-18-2011 05:44 PM

A stainless steel wire brush will scale a flounder in seconds.

Tex Dawg 10-19-2011 02:10 AM

Take the flounder to the car wash, hang on mat holder & pressure wash, takes scales off in seconds.

REALLY?

Ray 10-19-2011 09:57 AM

I usta use a pressure washer to get the meat off of gator hides. Super fast. No nicks and cuts like knives.

Yes dat works, but a wire brush is fast as well. I don't cut it down the middle. I do the boneless, pocket method. It's like filling up a meat bag with shrimp/crab stuffing.

jjam 11-05-2011 12:35 AM

Make video and post it

I like to scale then filet a couple flounders. Take a small baking pan. Lay the bottom filet white side down. Then add stuffing. Place the top piece of filet over the stuffing brown side up. Basically a stuffed flounder without the bones. Works good for me. Like a big flounder pie.
