Ideas For Group Cooking
I'm going to be setting up at one of the tee boxes for a client golf tournament and need some ideas on what to cook.
Criteria is as follows: 1.) people have to talk about it once they leave, so cool factor and flavor can be equal parts. If they aren't equal parts, one of them has to be off the charts. 2.) it will more than likely be hot outside, so a steaming hot pistolette or a jalapeño laced concoction isn't preferred 3.) can't be too elaborate of it has to be done all on site, but can be if preparation can be done days before and it simply gets tossed on a grill or in the pot the day of I don't want to just be another guy with jambalaya or rooster bullets, surely some of yall have great ideas you can pass along! i'd do finger foods. bacon wrapped oysters, redfish/shrimp/veggie/fruit kabob's, oyster rockerfeller type thing, roasted asparagus or corn, and some smoked fish dip. make some of the pepper ranch saltine crackers with jalapeno jelly and cream cheese. stuff that they can grab and run with.

Shrimp romalade wraps. Cold. I have done these at tournaments during the summers and always was a big hit.

You wrap em up individually and keep in a cooler? Sent |
Yea. Cook shrimp onions and bell peppers night before. Put on ice. Next day put down tortilla lettuce shreds, cold shrimp. Top with sauce. Roll and serve.
|
Also-- an icechest with a couple hundred towels to give away that are soaked in ice cold Florida water is always a big hit for those tourneys.

You could get some alligator wings. Actually these are the legs of small gators. Deep fried and something different.
I made gumbo balls for the Endymion parade party I went to. Those were a big hit! You can do the same thing (which I did not long ago)with red beans and rice. Basically like deep fried boudin balls. |
Zing Zang Bloody Marys with bacon and okra in dat.

Been on both sides and played in more tournaments than I care to share. You want something to make a splash and that they remember you. Everyone does sausage or some type of bbq or jambalaya. You may get some type of fried food at others. A lot will depend on your budget, help you will have and how much hassle you are willing to put up with. For the golfer, make it easy fast finger food that doesn't make a complete mess or ruin a shirt.
I know at the Lafayette Oilmans' the biggest hit is the fried catfish with pepper jelly by PSC. Its quick and finger food. I have received rave reviews of fried ribs and brisket sandwich of a pistolette. Either are good, brisket is cooked the night before and shredded with home made bbq sauce. Also had Monday braised pork cheek with some type of sauce, bacon butter and micro greens of cilantro by Ruffino's. It was pretty dam good! |
Fried catfish, get them by the case from guidrys in handerson

Go to smoked meats forum and search Atomic Buffalo Turds, ABT's
Good finger food to eat at the run at something like that. You can stuff hot and sweet peppers with things like sausage, cream cheese and chipolata. Wrap them in bacon, Prosciutto, or ham. I have cooked these for several events. Most of the prep work is done the day before and you cook them that day. |
Boudin eggrolls with steens syrup and pepper jelly dip. You can buy the rolls already made from Billys in Scott.
|
Grilled Pig Wings is something else that's different. The size of a big chicken drumstick. Use a good sauce and they'll definitely remember that. You have to get them from a food distributor like Reinhart in Metairie. Let me know if you're interested in those and I can hook you up with someone that works there.
