Tuna
Grouper
Mahi Mahi
Redfish
Drum
Trout
Flounder

On a side note on my honey moon in Bora Bora my wife had a parrot fish was bar none best fish I've ever eaten. No idea what it is or if it was just prepared perfect, it was delicious. Anyone else had it? I have a double frying cart on porch so I fry a good bit, I've been on a fried lobster tail kick. Cut them into nugget size pieces, drop in egg wash and toss in Zatarans crispy southern fish fry/panko crumb mix. delicious! Use the same process for anything I fry really.

True, Redfish and Drum do require advanced cooking skills. However, if that's the only game in town, I don't turn my nose up to it. Many areas in South Louisiana don't offer year round Speckle Trout opportunities... and I agree, 98% of the Seafood Restaurants everywhere screw up fried catfish.

I'm on the same page with you on the catfish; I love those catfish chips.

Big drum and redfish are nasty but the smaller ones are great lightly breaded and pan toasted.

Most all of you have eaten black drum in restaurants under the pretense of red-snapper, and probably thought it was fantastic. ;)

Sparhs in Des Allemands has some rocking catfish chips, wash it down with a Bloody-Mary and it's a spiritual experiance.
