Picked up a few quail from my local farmers market a few weeks ago, and decided to light the pit to kill the Monday blues.

I like to buy the boneless quail and stuff them with a crab or crawfish cake stuffing. I serve them with a crab or crawfish cream sauce.
I have also ground deer sausage in a food processor with raw egg and stuffed them that way too. Have you ever fried quail like chicken.

Yea, I have fried quail, quite tasty. I don’t get them that often. The ones I usually cook I take the breast bone, ribs and back bone out and leave the legs and wings on, and stuff with whatever I have in the fridge or freezer. Last time was mushroom stuffing.
