Recently finished up on a breseola, lomo, and panchetta. Thought I'd share. Paired up real nice with some cheese and olives.

very nice!! Ive been thinking about trying curing some meats, how long have you been doing it?

Been doing it for only a few months. So far have done bacon, corned beef and these. For these that needed to be dried I used Umai bags. Unless you have a fridge with temp and humidity controls the umai bags are probably the easiest way.
