Wahooooooooooo!!!!!!!!!!!!!!!
I have a loin with skin on. What's the best way to cook wahoo. I was was thinking about ceviche. Any other ideas for pan searing or grilling???

Good on the grill with a mild smoke like applewood

first make a mango salsa........
then EVOO in a pan, sear it................finish it in the oven.........light salt..........cracked black pepper.......... mango salsa on top........... |
Good on the grill. Try it woth some KC Master piece teriyaki marinade

think of wahoo as a white tuna... Cook it in similar fashion grill or pan sear

I go in at 250 and just for a few minutes to bring the fish to temp......too long it will dry.......but I've been struggling with my fish of late.....
Fresh it's perfect, out the freezer last time it was fishy........just giving full disclosure man. |
Well, I jacked up the wahoo. Cooked it way to long. Taster like tuna fish in a can with no water. Not good. I put the oven on 325 and cooked for like 25 minutes.

Also try blackening. Charlies blackening seasoning is a one stop shop. Half butter and canolia oil and sear then finish in oven. This seasoning is good..... no need to add anything else. If you have ever had blackened fish ag a restaurant, it tastes just like those. Great on blackened steaks too. Imagine Tony's seasoning without a ton of salt and not so hot. Its got a few different spices normally don't use that makes it one of a kind. Everyone I have sent to get this has put Tony's aside. Nothing against Tony's its the staple of Cajun cuisine.

I just but the delMonte mango in the jar out the fresh produce section......cube it up nice and small. Mix the amount of red onion you are comfortable with. Cut up the onion nice and small. serrano pepper too nice and fine, cilantro.....then lemon and lime juice.
It's really easy......great with chip as well. |
