Redfish Almondine

had some fresh redfish and not a whole lot of time so I tried something a little different.
I found a seasoning I liked (KC chicken rub) and added fresh cracked pepper and a little garlic powder. I then sprinkled a little flour and rub over both sides od the fish. I headed equal parts of pecan oil and butter in a pan and cooked the fish until crispy and then flipped and repeated. Once cooked, I set to the side and added another dab of butter and added almonds. Cook this until toasty brown....do not burn! You will be able to smell it when it is right. I usually add a squeeze of lemon but was out so I added a bit of lime. It was fantastic! Ragin Cajun |
that sounds really simple and good....need to get some Pecan oil. I saw it at Best stop in Scott last time I was there, but put it back on the shelf...that stuff is pricey

Nothing special with the oil, it was a gift and I wouldn't spend the money on it.
