Chicken Maque Choux
Ingredients:
1 chicken, cut into serving pieces salt, pepper and cayenne to taste 1/2 cup oil 12 ears fresh corn, cut from cob 2 chopped onions 1/2 chopped bell pepper 1 tomato, peeled and chopped Procedure: Salt, pepper and cayenne chicken, brown in heavy pot in oil; remove from pot as it browns. Add remaining ingredients, stir and cook on med-high heat about 2 minutes, return chicken to pot, stir, cover and cook over medium heat about 30 minutes, stirring occasionally. Serve over rice. |
here ya go
Melt the butter in a large saucepan or pot over medium-high heat. Add the onions, bell peppers, celery and tomatoes and saute until the onions are transparent, about 10 minutes. Stir in the salt and peppers, then add the corn and milk from the cobs, the sugar and evaporated milk and stir well. Reduce heat to medium and cook until the corn is tender, about 10-15 more minutes. Adjust seasonings to taste. Serves 8-10. |
This is how a Bohemian from Texas cooks:

Tried Big Dogs recipe last night. It was fantastic. Gonna try Leemos next. Then I'm gonna have to burn something before the wife finds out I can cook.
I'm gonna get fat following this thread. SK |
