Texas Style Flounder
SaltyShaw sent me home with some flounder from our trip Tuesday...Decided to cook them up for my Dad and his girlfriend.
Did not feel like paying premium prices for shrimp when my dad and his gf aren't the biggest fans of seafood so I decided to throw together a "stuffing" 1 large sweet onion, diced small 3 medium sized jalapenos, seeded and diced tonys cayenne pepper cracked black pepper Sauteed the onions and jalapenos in butter until onions were caramelized and somewhat clear put butter in the butterflied flounder and added onion mixture on top Baked at 425 for 30 minutes http://a6.sphotos.ak.fbcdn.net/hphot...96158431_n.jpg It was good. If you want a good cheap stuffing, melt some butter in a pan and cook down some finely chopped and onions, bell pepper and celery with what ever seasoning you like.
Crush a hand fulls of Corn Flakes and throw in the seasoned onion mix. When it all gets soft, stuff dat flat meat and cook. |
