Blackened Fish Tacos
Simple but one of my favorites!
I prefer trout,red, flounder, any filets will work. The morning before cooking I will throw them in a bag with onion, cilantro, garlic, olive oil, and some cut limes. Then get the cast iron skillet about medium high heat with a little more olive oil. Throw filets in whole, cook about one minute, flip, then sprinkle on some holliers seasoning. Cook until flaky and pull off. I like to use homemade corn tortillas. I also make a little remoulade, and Cole slaw to go in the tacos. Also made some fideo to go with. If you've never had fideo, which I hadn't until I came to TX. Look it up.
