got some redfish cevichi brewing right now. should be ready to sample about 3 pm. 1st try, wish me luck.

shows ya what a country arsed uncultured old Cajun I am I hadda look up ceveche to see what it was. I'd give it ago. wonder if lemon juice would work cause I still got plenty of that stuff. Our lil lime tree got froze though and we are currently lime less.

it came out real good. some changes next time though. not enough jalapeno, too much purple onion and i put avocado in and the avocado wasn't soft enough. the redfish was great and the lime juice cooked well. could have used a little more pop, maybe some different type of pepper added to the jalapeno. good, but still tweeking.
ordering some conch. want to try same thing with the conch.

Never cooked it but maybe steam your onion and alvacado before putting them in the dish?
Sig Nate could tell you just what to do im sure.

Try adding some cilantro. Takes it to another level. Last time I used a mixture of lemon and lime and it came out great. The only thing I can see of going wrong here is having bad fish.

I had a buddy of mine make it offshore on the boat and he threw in some lump crab meat...it was a nice kicker too.

I'm going to have to try it! We had some made with Mahi Mahi that we caught in Mexico. I just haven't tried to replicate it here yet.
