Advice on eating Exotics
I know all about how good Axis deer are to eat. I have never had any other kind of exotic meat. I have access to property in texas that has Sika, Fallow Buck, Black Buck, Audad Etc... Anyone ever eaten any of these animals and if so was it good?

I have ate axis before....to me it taste better than white tail!

We killed a bunch of axis this summer on my uncle's ranch. Everyone was saying how good it would be. Personally, I don't find it any better than whitetail. Never tried any of the others though.

Black buck are ok. Audad make great sausage. But to cook you can't make it tender. The more u chew da bigger it gets in your mouth

IMO black buck has a pretty strong wild taste if cooked in a gravy. I BBQ it and its better but I perfer whitetail. Axis backstrap wrapped with bacon and put on the pit is good but then again what isn't:rolleyes:

The back straps on all are good. Its best to age the meat either in a cooler or in an ice chest. Wrap the meat in trash bags and leave the drain open with a brick under the opposite side from the drain. Keep well iced for about a week. Do not let the meat get wet. A meat hammer will tenderize any thing just use plastic wrap to keep the mess down. Also diet coke is a great tenderizer that will also take out the wild taste. I love grilled black buck back strap. Grill it whole and slice thin like flank steak. Also serve medium to medium rare.

I like all of the above but, Audad. If any body ever gets the chance to eat a Zebra, don't hesitate, it is very good.

I've taken a couple Sika in the hill country and it's is best eating I've ever had. Season up a sika roast and slow cook on the grill a couple hours loosely warping in foil the last hour so it don't dry out. Better than beef IMO.
