....Amber Jack? I have never tried amber jack and I was wondering what was yall favorite ways to cook it. Tank ya, sha in advance....

Well if its super fresh I make ceviche, but once its been frozen I just grill it on the pit with lemon butter and stuff. basically just how you cook mahi mahi

Grilled, fried, baked... it is good firm meat.
If you bleed them while they are still alive, it will taste better.
You can cut the gills and let bleed, or cut the tail all the way thru the bone and let bleed.

Seasoned and grilled, then throw on a po-boy bun with your favorite fixins.
Be sure to baste or it will dry out the outside of the fillet.

smoke it...thats my favorite way to do amberjack..i smoke it then make a smoked amberjack dip with the left overs...

i hate amberjack but will eat if fresh. fish tacos is the only way.

smoked and made into a dip! smoke it at 190 for 2-3 hours....pecan/hickory mix
