Redfish gravy
2 Attachment(s)
I normally don't keep reds over 22inches but on a recent trip with W we caught 3 beautiful reds and I decided to filet them and try them in my signature red gravy. Damn they were good. Done all at once in a pot in the oven.

OK here is the recipe:
In a magnalite roaster just coat the bottom with cooking oil
pour in one can of tomato sauce(not the short can)
chop one white large onion, one bell pepper and press 4 cloves of garlic one bunch of chopped green onions small bunch of chopped parsley and add to pot
stir in one half cup of flour
fill tomato sauce can with water about 3/4 full and stir in
season 3 large redfish(these were from over 27 inchers) fillets with salt and red pepper generously and then when adding fish to gravy make sure to coat both sides of the fish with gravy by dipping and then lay flat in pot(do not layer fish on top of each other as it will not cook the same)
place pot in 400 degree oven for 1 hour and 15 minutes
serve over rice

I'm gonna give this a go with some snapper.
I like to gravy down fish that has been in the freezer for a while

Should work just fine with snapper. It is very good with large trout filets also.

Your recipe inspired a new dish at the house last night. Used a chicken cut into pieces and tried to follow the recipe as close as possible with what I had on hand. Some of the best chicken I have ever served. Thanks
