Saturday's Crawfish Boil
 
I should have posted this sooner but it's been a hectic weekend and today was no better. Finally I have a few minutes to catch up.
Saturday afternoon I picked up my crawfish order of 36 lbs of frisky live crawfish. I had to go to the office for a couple of hours to do some work so I brought the crawfish into the office so they didn't get cooked out in the heat. I had the whole sack in a big 30 gallon tub so I felt they would be alright and not escape. Yeah right! I went to the front and as I was passing an inset area I see a live crawfish crawling along. I grabbed him and tossed him into the tub and went back to work. I sat down and thought I'd better check to see if there were any more escapees. Sure enough I found another one in a corner. Now I have to get on my hands and knees to make sure there aren't more escapees. The last thing you want in the summer is to walk into your office and discover dead crawfish that have begun to stink. I didn't find anymore so I left after doing a little more work taking the mudbugs home to get boiled.
Yesterday(Sunday I had to go back to work for a few houes and what do I find. A dead crawfish that made a long trek from the front door to the middle of the lab. He wasn't stinking so I was lucky and glad of that. Lol....
Alright so I get home Saturday rinse the crawfish and let 'em soak to clean them while the water comes up to a boil. I get the usual seasonings cut up along with about ten oranges I still had on the tree and of course have myself an ice cold beer.

I started with an Icy cold Abita Golden. s hot as it was Saturday I didn't want a heavy dark beer. You know how that first long icy cold sip of your first beer is on a hot day? That's one of life's greatest pleasures!

That first beer didn't last very long at all! Next up was a Samuel Adams Summer Ale.

Got the rolling boil going and tossed in all the goodies and potatoes. I had a video of a super hot rolling boil but it won't upload.

While the crawfish are boiling it's nice to have a good stuffed artichoke to snack on.

Nice looking boil, however, I like my onions and garlic whole, so I can squeeze out the middle, into my mouth.

I cook them, and all veggies and sausage separalty.

Next time, bring an ice chest, put them in it with ice ontop, in the sack, and leave the drain plug open, so the water drains.

Good for one day, if not two, as long as they stay iced, and in NO water.

Yeah, I've done that when the seafood store was closed and I wanted to boil on a Sunday. I've even done that to bring crawfish up to north Alabama when visiting friends.
I should have just made sure the top of the sack was tied tightly.

Just the ice you get at Sam's Club. I iced the beer down right when I left there and it was icy cold when I was ready for one.
