Cuban Sandwich Night
This morning I noticed we still had some thin sliced pork loin left in the fridge from the other day. I thought about it, and it didn't take long at all for me to figure out what to do with it. All I needed was some sliced ham, Swiss cheese and a loaf of good French bread. That should actually give away the answer to "What's for dinner tonight?" Cuban sandwich! It had been a while since I had one so that's what it would be. They're not difficult to make at all but I'd bet few make them at home much. First the yellow mustard(I actually mixed mustard and mayo together and put some of that on the top slice of bread), sliced dill pickles and the Swiss cheese. Then on the other half the ham(Columbus Black Forest)and sliced pork. Put the two halves together and place on a hot buttered griddle and put something heavy on top to squish it down. http://i1183.photobucket.com/albums/...e/DSC02244.jpg I used a 9 x 13 cast iron pan.
