Fig tree is going crazy out in the Garden!

Got a real nice big bucket full off the tree today, so it was Fig Compote / Jam making time.

This is both celeste and LSU Gold varietys of figs... my little 2 year old girl decided to help daddy pick so some of them are a little less ripe than others. :)

A lot of people seem to like the pureed style fig jam. I could have went that route with these by blending / using a boat motor on em... but i really enjoy the chunks of fruit in the mix. Hope to get at least this much again on a second picking of the two fig trees..... I love me some fig preserves... :)

Those LSU gold / purple figs are crazy huge aren't they... I am always amazed at how much larger they are than the celeste's.

Eh those 2 were kinda bitter..not sweet at all. Putting a Bird net over it in a few days. Dat rum looks good son!

Yeah you want em super ripe for eating fresh... But for canning i like em still a bit green they turn out just right when cooked... (or at least how i like em)

try putting some plastic snakes in the tree they work real good for me to keep birds away.. (you just gotta move em around every day)

Wow that is impressive.......I really enjoy fresh figs.......my grandmother would half them and simmer them down with a little sugar and we would eat them on saltines for snacks.

We might be cousins because my MawMaw did the same thing. Either that or she would toast some bread for us and we would eat figs and toast.

We just made a huge patch as well. Made some mixed with fresh strawberrys,talk about good.
