Grilled the fillets outside on a flat iron w/coarse salt and olive oil . Let rest for a bit the topped with lump crab and ghee, moved into the broiler till it sizzled ...

Cant wait to see what yall do for the holiday weekend. I got the thin end of a brisket been soaking in chrystal hot sauce, seasoning, and woo sauce since yesterday plan to put it on the pit maybe today maybe tomorrow.

Thanks. I get that a lot! Lol After 15 hours I pulled them off. They were smaller butts (5 and 3 lbs) but they stalled out for a loooong time. I chopped some and pulled the rest for sandwiches.
