If you get a good cut of Choice quality meat, it's still a good steak when prepared right. Personally, I buy Choice (e.g. Rancher's Reserve) steaks usually, unless it's an important dinner. Then I'll go out somewhere that has good dry-aged beef like Capital Grille.
