I cooked a grey duck on a rotisserie the other night. Wrapped it in bacon seasoned with salt and pepper. Talk about good. I do gumbo and pot roasted ducks a lot. When I breast a duck, which is pretty rare I usually marinate it in soy sauce,garlic,siraccha, some kind of citrus, and balsamic vinaigrette.
