I don't know much about this but I wouldn't dream of doing it without insurance. Also I would be more inclined to lease the blinds instead of running a guide service out of em. An outfitter has to cater to sports, then hope they kill, their entire business is based on a good rep, all while feeling generally unappreciated. One bad report can ruin your business.

If you lease blinds, it's all up to them. They do all their own work, kill their own birds, grass their own blinds, and if they don't kill then the monkey is on their back. A bad report doesn't really matter because if one group decides not to renew their lease, there will always be another group of suckers the next season.

At $200/gun, group of 3, booked for 10 hunts = $6,000
A mediocre blind leased for one season nowadays is going for $4-6k.

Just my opinion.
