Vacuum sealer is definitely the way to go. I have a Food Saver brand and I love it. Vacuum seal all my fish, deer, ducks and whatever else. I fix a little pile of fillets on wax paper and put it in the freezer so it can firm up and glaze over. I then cut the size bag needed, mark the bag with a sharpie identifying contents and date and seal it up. By pre-freezing you eliminate the moisture that can interfere with the vacuum suction and seal process.

Great idea about freezing first. I think I'm going to try the vacuum process because the frozen water method is taking up too much room for me too.
