Stuffed Flounder
Ingredients
Stuffing for 2 medium flounder
- 2/3 cup butter
- 1/2 cup minced onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped celery
- 1/4 cup minced shallot
- 1 large garlic clove, chopped
- 1 tablespoon flour
- 1/2 cup dry white wine
- 1/2 cup milk
- 1/2 cup raw shrimp scalded until pink
- 1/2 cup crabmeat
- 1 cup soft breadcrumbs
- salt , pepper and red pepper to taste
Directions
- Sauté onions, bell pepper, celery, shallots and garlic in butter until soft and tender but not brown.
- Sprinkle with flour. Cook, stirring constantly, for about 2 minutes, until mixture browns.
- Gradually stir in white wine and milk. Cook, stirring over low heat until mixture is smooth and thickened.
- Remove from heat and fold in shrimp, crabmeat and soft breadcrumbs.
- Season with salt and pepper to taste.
- Debone flounder. Season well with salt, pepper and red pepper. Stuff cavity.
- Lay the flounder(s) white side down in a flat bottom broiling pan filled with 1/4 inch water. This prevents the flounder from sticking to the pan.
- Lightly coat the top with melted butter and lemon juice.
- Put the dish under the broiler for 15 to 20 minutes until dark brown and crispy on top.
- Serve hot; garnish with lemon wedges and parsley.
