My mom use to fix cow tongue fairly often when I was growing up. I guess my Dad had something to do with liking cow tongue, because he grew up on a farm. Mom was a city girl with love for the outdoors.
We [my 2 brothers, and sister] would fight over who would get the "tip". Usually it would be cut down the middle, so two people got the tip.
I remember mom pulling the skin off after boilling it some.
