Grilled Drum w/Creamy Crawfish Sauce
Had some drum Fillets and decided to grill them. made a sauce to top them off, sliced some tomato and steamed some fresh baby spinach, came out good.
Sauce
1 - 1/2 pint heavy cream
1/2 stick butter
1 - Can cream of celery soup
1/2 cup cream cheese (about a third of a block)
2 - Green Onion (Shallots) chopped fine
1- Cup Crawfish tails (Shrimp or Crab meat will do)
Splash of Lea & Perrins
Simmer, Cream, Butter, Soup, Cream Cheese & L&P in a sauce pan (bring to light boil) stir to keep from sticking. Add Shallots & Crawfish tails, simmer then reduce heat for 2 - 3 min. Spoon over fish while still warm. Enjoy!!!
