Ice Glaze fish! Freeze on a baking sheet or plate for ten or fifteen minutes, take out and dip in ice water, back in freezer for another ten, dip and place on other side (equal ice glaze) back into freezer for a few then simply toss into a Ziploc or wrap in freezer paper.
