GT .. It looks awesome... I got me on the tater salad.. I like my real creammy.... LOL


I drop my eggs in Shrimp and okra gumbo... When gumbo is cooked.. Before I put swimps in... I turn heat down where gumbo is just a light simmer.. I crack eggs one at a time; then I start dropping them around the outer edges of pot.. Adding eggs all away around pot.. Put lid on.. Don't stir gumbo.. Bring gumbo to a very light boil... (Really a hard simmer). After about 15-20 minutes I'll remove lid...Check eggs for doneness... If U stir before yokes get hard then I have egg drop soup...

I then put my shrimp in and cook for until shrimp are done.. Put parsley and onion tops and a little premium home grown ground file.

That's It.. The major thing is not to stir gumbo until eggs yokes are hard.. 10-15 minutes on a hard simmer.

If its a rolling boil.. when U drop your eggs it will be egg drop soup..

I put boiled cut in half eggs in Shrimp stews only..

When My 2 sons where little I had to put an egg in the gumbo for every bowl of gumbo we eat.. No less than 6-8 eggs every time..

That's 2 bowls average per person... With some awesome garlic bread.. Can't be beat...

When I was grown up.. My Mom used brisket in our okra gumbo.. Brisket back in the day was a throw away piece of meat.. Its awesome also.. I cook chicken and okra alot also...
