You got to put them in an ice slush when you catch them and in an ice slush as you fillet them ... When you freeze them put in zip bag with water and when you defrost put that in front of a fan and they defrost fast....Don't run under water....Myself I like to whole fry 11 inchers and fillet up to 14 inch....Above that I throw back....I just personally find they get a strong taste...They used to be on the western end of lake P. in late summer and fall with bull croakers but I haven't caught any since katrina.....
