Default Rice and Gravy Rump Roast



Yesterday morning I took a nice rump roast and stuffed it with garlic and seasoned it with salt, pepper and garlic powder and got a nice sear on it. When I liked how it looked I removed it and tossed in some diced onions and cooked those down til soft and added a lil water to further deglaze the bottom of the cast iron pot. I put the roast back in and added some water, brought that to a boil and reduced to simmer and went outside to cut the long cutting overdue grass in the yard.
With having rain just about every day I kept putting it off. Not going to make that mistake again. Lol...... Well, one thing led to another and I was outside doing yard work for a good while but I'd go in and check on the roast throughout. I figured the roast would be done by the time I'd finish the yard work but when I came in I thought it could use a little more time cooking for slicing. Later in the afternoon my daughter attempted to slice the roast for dinner and it fell apart. No problem as it was tender as could be and perfect for roast beef sandwiches. We still ate it over rice and it was delicious. I whipped up some broccoli and cauliflower with a cheese sauce and field peas for sides. Not a bad meal at all!!!!
