Basically the same technique this guy uses, except he doesn't change knives. It looks like he's using a Dexter Russel with a 6 to 8 inch blade. Has probably been doing this every day for many years. Fastest I've ever seen.

Yup. Its an old wore out dexter he uses. His only sharpener he uses is an accusharp cheap sharpener. Should see him knock out a pile of trout. Uses a hamilton beach electric knife from wal mart. He cleans fish for a living.

Yep, that dude is fast. I picked up a few tips from him.

I tried to slow it down enough to be safe and communicate what is happening in a way that someone with less experience can benefit from.
