Default Smoked Redfish

Watching all these ""Alaska"" shows and all these peps smoking their salmon for the winter got me to wondering, can you smoke redfish? Im sure specks are good for smoking too?

Any word on this?

i've done speck, but never reds. a waste of good eatin fish. pickled some too, same opinion.

Have to agree. Serve some foreigner to these parts a piece of blackened redfish, some redfish on the half shell, and then a piece of dried, smoked redfish, and watch them spit it out.

One such foreigner was handed a little bowl of Redfish and Shrimp Courtboullion, looked up with a smile and said..'That's the best thing I've ever put in my mouth'.

I Will smoke a few fillets for fish tacos. But a lot better ways to fix them.

Only fish I smoke are Gar. And they taste awesome that way. It's a lot of work but worth it.

Fish that are best for smoking are very oily. .......... the oil in meat works well with the smoking process.

I am not sure which fish are best in southern waters for this, possibly fish like buffalo, carp, etc

But redfish and trout, are both far to lean to have smoking work well on them....

This..... and I'll dad that I've had smoked mullet and it wasn't terrible but it wasn't smoked salmon. It was more like mullet jerky.

I love smoked salmon.I smoked some trout a few years ago.It was bad real bad.My dog turned away and he eats any thing.

just remembered that a friend of ours was smoking some redfish throats and they were great. we ate em on crackers, but my wife made a comment about how good a dip it would have made. worth a try. start saving the throats if you don't already.

My father in law makes a smoked redfish dip and it is outstanding. There is a recipe for it in the Jan edition of La Sportsman as a matter of fact.
Not sure what recipe he uses but it is great. I will be trying to do some myself so I can kick up the heat some.

I agree. My used to smoke gar also. He would make jerky and tasso with it. If you didn't know better you would think you were eating beef.
