Default Smokin up some gumbo ingredients.

This time of year stuff goes on sale and I always smoke up some gumbo makings. I have 2 mature ducks and a huge baking hen cut in half lightly seasoned and parked on the pit. They been on lil over an hour and coming along nicely that will make 4 gumbos. I aint fully cooking them just giving them a hint of smoke then into the freezer for future use.

its a good way. We dont use smoked chicken every time some times fresh, just like we dont use okra every time but like it. The duck necks were nice and large so I smoked them too and reserved them for beans??who knows.
