Default Rutherford Beach

Hit the beach Saturday and caught some meat. Fish were out there. Waded out 100yrds then cast another 100. Was going out to the edge of the second sand bar to cast. By the end of the day the water was chin deep wading across the trough between the sand bars. 4 good bulls, a small ray and caught 2 bull sharks in the 3 1/2' range. It was a good time.

I was told by a guy that certain species can be swapped in the food industry without notifying customers. for example, redfish on the half shell can be substituted with black drum on the half shell without changing the menu/sign. He said the same is for scallops. He said that many times stingray is substituted for scallops(especially bay scallops). So seeing this post has me interested to see if this is legit. Does ray taste/texture like scallops or does he just like stingray meat

Sting ray is called skate wings in the food industry. They are great table fare. As mentioned before they are used as an imitation scallop. They filet and cut with a cookie cutter to look like a scallop. The texture of meat is tougher with a larger grain than scallops but still tender. They don't taste like a scallop. They don't have any flavor to them. Just a clean neutral taste.

I took the fillets and cut them into pieces and fried them. Very clean tasting meat. No fishy taste at all. This was a small one though. I liked it and hope to catch more. That was my first one.
