I believe its a Goliath sunflower. I may be wrong. We have a smaller variety and some of them are around 12' tall.

If harvesting for mature seeds wait till the flower dies and also the flower head. That green part behind the flower. When it turns brown they are ready to harvest.

Default snflowers

we planted about 3 or 4 acres of sunflower/millet and milo in a field. Well it came up and was doing great then the landowner came in and disc it all under for us. they had dove and quail in the this field but after the landowners help nothing. I got off after that. I have hunted sunflower fields in Winnie and they would cut small strips about ever 3 or 4 days. The doves would come in about 80 mph and land.
