Default Specklebelly recipes

I've got a good bit of speck legs I've been keeping separated from the breasts, wondering if anyone has any tips or recipes for just the legs? Besides a gravy.

We use the legs as a appetizer, we put pepper cayenne pepper onions and bell peppers and jalape?os sliced up with them in foil with a little of water, close up tight and put it in on the grill for 30 minutes, good snack

marinate a day or so in worchestire, mustard, and lots of black pepper and salt. bread and fry-delicious. the marinate breaks down the meat and tenderizes it

We have made spec and dumplings, I like it better than chicken. Good meat.
