Default mustard adhesive

was surfing one of the florida forums and some one brought up using mustard as a adhesive for your batter. i've eaten it at a friends house several times(he thinks it's the greatest thing since sliced bread), but i don't care for it. just wondering what the culinary cajuns think about it.

I use a squirt of mustard,an egg and a few drops of louisiana hot sauce, batter in corn flour, fry in clean oil, drain on a wire rack, sprinkle with Cajun Seasoning as soon as it hits the rack. Eat hot....

Everyone has their opinions on recipes and they all think they have the best way. However one undeniable fact about frying is to place the food on a wire rack after it comes out the grease. Will keep it crispy and fresh tasting.

Oh and no I don’t use mustard. I do if I’m trying to cover a nasty flavored fish.

I use mustard but just enough to wet it .

Mustard is a good adhesive for BBQ. Egg wash for fired foods, otherwise you're masking the flavor of the food.
