Default Spare Ribs

Got 9 racks of spare ribs on the smoker now.
St louis trimmed and seasoned w/ e mans pig rub.
along w/ some wicked beans and tater salad The boys at work going to be happy happy at lunch time tomorrow.

Love me some smoked ribs.
I cook 2 racks every time I am home.
1/2 rack for my wife, 1 1/2 rack for me.
She is on a diet...
Plus I throw 10 lbs. of leg 1/4's on the
smoker at the same time.
Last week, I found some boneless and
skinless leg quarters at Market Basket.
Smoked me 20 lbs. of them too.
Got them vacuum packed in the freeza.

You know you could get good money for that out on the rig .
Them forigners just cant cut it on the good food.

We can't have a bbq on our platform. Company said we could.
Bought one, got a deluge system installed on it in case of an
emergency.
But the catering company said it was too dangerous to cook
on an open fire. So we sent the pit into the dock and someone
stole it.
The Filipino's can't cook worth a crap. But they do clean pretty
good.

Fed evryone on site today .Even the texicans laying block.
All were impressed and said that the ribs were better than any you can buy around here.
One guy asked why no BBQ sauce? i handed him a rib and told him taste this and if you still want sauce i'll go get ya some.
None needed , none wanted ,Nuff said!
my rub speaks for itself.
Ribs could have used maybe another hour on the smoker as the thicker ends were not done to pull off the bone clean .
I didn't take pics of this smoke as i was running behind schedule.
I smoke on the MES 40" from sams.

I got an old oklahoma joe smoker. smokes pretty good. easy to keep temps just rite.
