Question Anduille Smokers ????

I smoke sausage the next day after I make it . I tried anduille a couple times with edible but not best results . Wondering how long to let cure ? I may have cooked too slow when I attempted before . I would think it would take longer to cure the chunks of meat in anduille than sausage . It's in the same casing as my sausage and I got my temps. rite now so I'm giving it another shot .

try getting the meat ready then letting it sit in da fridge overnight das what we did with the last batch came out pretty good

I stuffed it this morning . I guess I smoke it tomm. morning with the sausage. Last time it wasn't to tender when finished but may have been I didn't have my temps. down rite . I know the thicker the meat the longer it takes to cure. When rouses puts boston butts on sale 97 cent it hard to buy anduille 6 to 7 dollar a pound when i can do it myself....

Remember when ya buy those buttes Rouses will butcher tehm any way ya want for free. they make amazing steaks and I often get them to slice them into strips. they make great BBQ and alls ya gotta do is slip the bones out and they fit right into ya grinder. For that matter I am told they would even grind em for ya but where's the fun in that?
