Sometimes I use okra but I use a small amount to get that flavor but it doesn't slime it up.

No okra? Da phuk? Lost my first gumbo cookoff to a gumbo with okra. Of course I lost to a blonde in heels with a mid thigh skirt and a low buttoned shirt. Admittedly her cleavage was a lot better than mine. I didn't feel bad though. If you're willing to cook gumbo for half a day in heels you deserve to win.

I use okra in my gumbo and get very little slime. just have to use some slime be gone.

That's cause they don't cook the okra down enough. Cooking down okra is an all day affair. If it's done right, there should be no slime at all.

I agree.. Cook first...It is an all day affair.. Chopped onion, fresh garden tomatoes.. I found a lady who washes, and cut okra up and bags it. I cook mine in the oven...

That does sound good Gunner. One of my favorites is okra smothered just like you described then add some shrimp in it and pass that on some French Bread. Tonnerre, mais ca c'est bon, oui!!!
