Y'all be carfeul out there. If you go into the LDWF headquarters in BR, the first thing you see is an awesome mount of a cougar that was killed near Shreveport. Turned out later it was an escapee, but still a good mount!

Cougar meat is a great tasting meat and tastes somewhat similar to pork. However, it has to be treated well and the animal should be skinned as soon as possible. Old mountain men considered cougar meat a delicacy. Since cougar is a predator that hunts and eats other animals, it is recommended to cook it thoroughly to avoid contracting the dreaded Trichinosis parasite.
Cougar stuffed meatballs with cheese
Ingredients

1 or 1 ½ pound of finely ground cougar meat
2 eggs
1 cup of fine bread crumbs
30 to 40 ml of milk
1 teaspoon of salt
½ teaspoon of black pepper
¼' cubed cheese
Mix meat with all the ingredients, leaving aside the cheese and make small balls of the mixture with pieces of cheese inside. Keep these balls in the refrigerator and chill for an hour or so. Pour oil in a frying pan and heat it for about ten minutes then release the meatballs one by one and deep fry till they turn brown and crisp.


Rolled Schnitzel
Ingredients
2 medium to larges size boneless steaks
one pound of salami, bacon or spicy sausage
Mix
½ cup of margarine melted
1 teaspoon of fresh lemon juice
1/3 cup of milk
Mix
½ cup of fine bread crumbs
½ teaspoon of onion powder
crushed corn flakes about one cup
½ teaspoon paprika
½ teaspoon of parsley
salt to taste and pepper as needed
Pound the steak until its thickness is reduced to about ¼ of an inch. Cut the steak into two wide strips and top it with salami or bacon. Roll up the steak along with the bacon or salami and secure with a toothpick. Dip the rolls in the moist ingredients and coat it with dry breadcrumbs. Take a frying pan and apply very little oil to it place the rolls in the pan and cover the pan with a lid, bake at 350 for thirty minutes after thirty minutes uncover the pan and bake for another twenty minutes.
Cougar Steaks
Ingredients
1 pound of cougar steak
Marinade
Flour
1 teaspoon bacon fat
3 tablespoons of cooking oil
Marinate the steak in your favorite marinade for two to three hours. Dry the steaks with flour by applying it on both the sides of the meat. Pour some cooking oil in the skillet along with the bacon fat and place the steak in it and cook over medium heat. Keep turning the steak till it is well cooked.

It's against the law to shoot them. We have some on our land in texas and when they scream at night it is some scary sounding stuff.

I never knew if it was legal or not but was told to shoot if I ever got the chance. We would see tracks but never saw one.

A buddy's dad owns a high fence ranch in west texas and he was telling me how they were horrible over there, then he told me how they'd hunt them at night and it was legal. Didn't think texas had anything fun to do and legal anymore:*****:.

Back in 1996 I saw a black one south of Deridder on our deer lease. I had a brown one jump across the road in front of the truck 3 yrs ago too. Both sitings were about 300 yrds apart. Its track was wider than my hand. I told wildlife and fisheries about both sitings. They said I was seeing things and said it was a dog or a coyote. I said it was too long and had a long curved tail.
