Default Fish mounting recommendations? ?

Went fishing in Cocodrie this weekend and caught a awesome bull red loaded with spots. Needless to say he is going on the wall. Who have yall used to mount some fish?

Start by buying the fish dinner and a few drinks,then bring it flowers and other gifts and if you're lucky it will let you mount it.

Do the German guys actually still do taxidermy work or is it people that work for them? Not knocking them at all. Whoever is actually doing the work must do a good job because I've heard a lot of good things about them.
