Question Beef Jerky

Gonna smoke some up on Friday ....... anybody marinate in anything special ? or any special ways....... have made my own a few times and it comes out pretty good, but nothing to brag about....

Like to know my self I got a dehydrator for Christmas made a few batches that came out ok. What kind of meat do you use?

Ive only made jerky in a food dehydrator... made a teriyaki marinade out of a chinese cookbook its pretty damn good

you want to go lean...eye of round, sirloin, top sirloin, top or bottom round. Make sure you slice it first and marinate it over night in a ziplock with all the air out so the meat is fully covered

I used a brisket ..... Trimmed it up and cut in strips....... Gotta it seasoned And vacuum sealed in the marinade ....

Even slices is key. I partially freeze what I am gonna slice first. Makes it a lot easier to get consistent cuts.

I got a couple of wood ducks that I want to smoke (this will be my first time)to go along with the jerky..... how do you prepare the ducks?

I am making some right now in my dehydrator. I deboned 2 deer hind quarters for jerky. I dont measure anything but this is what i use. Liquid smoke, red wine, hot sauce form marindade. Let marinade 2 days. Drain liquid and pat dry with towel. Season generously with crushed red pepper, salt, garlic powder and cajun seasoning with low salt content. It takes about 7 hours in my dehydrator.

If using a smoker just cut out the liquid smoke.
